Vegan Chocolate Chaga Protein Muffins
Muffins can be a great way to enjoy a yummy snack on the go, but often times are packed with sugar and fat with very little protein and nutritional goodness. That’s why I created this delicious Vegan Chaga infused muffin that’s packed with protein, fibre and and flavour! Puricas’ protein powder is my absolute favourite Vegan protein powder to use because its fermented pea protein isolate and organic sprouted brown rice are uniquely powered by anti-oxidant Chaga mushrooms and natural ProHydrolase® probiotic enzyme blend to enhance digestion. I use the chocolate Chaga powder in this recipe, but you can substitute that with either the vanilla or unflavoured if your palette prefers.
3/4-cup quick or old fashioned rolled oats
2 whole eggs
2 egg whites
25g Purica Chocolate Chaga Power Protein
1/3 cup unsweetened cashew, almond, or coconut milk
1. Preheat Over to 350 degrees
2. Mix all ingredients well in blender or Vitamix.
3. Pour mixture into muffin tins or baking cups.
4. Bake at 350 degrees for 15-18 minutes.
